ALMOND ENCRUSTED COD FILET

 

Imagine a flaky white fish fillet, perfectly cooked and glistening with a golden brown, herb and almond-infused crust. This delectable coating isn't your typical breadcrumb affair. Instead, plump, jewel-toned succulents herbs, and spices chopped and mixed with, toasted nuts (almonds or pistachios would be divine). The result is a textural symphony.

INGREDIENTS:

  • 1 Lb of Cod, 2 filet (Grouper, Snapper, or any white fish)

  • 4 Tbsp of JOY’s Gourmet Garlic (Original or with Green Olives)

    1/2 cup of chopped almonds

  • Salt and pepper to taste

  • Mediterranean Spice Mix (optional)

  • 1 Tbsp of medium size capers

PREPARATIONS:

Spread the garlic evenly on both sides of the fish filet, making sure to coat the fish thoroughly with the aromatic spread. Sprinkle with the Mediterranean spice mix (Optional).

Press the chopped almonds over the fish filet, I like it heavy. Transfer the fish to a baking dish and bake at 400°F for 18 minutes or until a fork easily pierces the fish.

Mix the capers with 2 Tbsp of Joy’s garlic spread and serve next to the encrusted filet.

PRESENTATION:

Serve with mixed green salad with Joy’s Garlic lemon dressing.
