BRAISED SHORT RIB
I hear you! Slow cooker meals are lifesavers on busy days. There's nothing quite like the aroma of a delicious meal simmering away all day, ready to welcome you home.
One of my favorite meals is Beef Short Rib. A slow cooker pot roast is a winner. Tender beef, flavorful vegetables all cooked in a rich garlic gravy sauce. It's pure comfort food perfection. No matter whether you choose beef, chicken or vegetables only, the beauty of the slow cooker is the "set it and forget it" approach. Just prep the ingredients in the morning, and dinner practically cooks itself while you tackle your day.

INGREDIENTS:
4 Tablespoons Joy’s extra virgin olive oil
4 Tablespoons of Joy’s Gourmet Garlic Spread with Sun-Dried Tomato (any of your favorite garlic spreads will work)
1 Tablespoon of Joy’s Mediterranean Spice Mix (FREE when you purchase 4 or more garlic spreads)
1 yellow onion , diced
3 carrots , chopped
8 whole beef short ribs
salt and pepper , to taste
1/4 cup all-purpose flour
1 cup dry red wine (such as Cote du Rhone or Pinot Noir)
2 1/2 cups low-sodium beef broth
2 Tablespoons tomato paste
DIRECTIONS:
In a large pot with a lid, heat 2 tablespoon of oil over medium high heat. Add onion and carrots and cook for a few minutes, stirring constantly 2-3 minutes. Remove veggies to a plate.
Season the ribs with salt and pepper, cover them with the garlic spread, and coat on all sides with flour. Add 2 more tablespoons of oil to the pot and turn heat to high. Add ribs and brown on all sides, about 45 seconds per side. Remove to a plate.
Add the wine to deglaze the pan. Scrape the bottom of the pan to release any browned bites of flavor. Bring to a boil and cook 2 minutes.
Add beef broth, MEditerranean Spice Mix. Stir in tomato paste. This will be a good time to taste the broth and add additional seasonings, if needed.
Transfer everything into the slow cooker, add ribs, and veggies to the slow cooker. Cover with the lid and cook on low for 6-8 hours. Ribs should be very tender, nearly falling off the bone.
Serve ribs over Garlic Smashed Potatoes with a spoonful of gravy from the pot.
