CAPRESE SALAD WITH PESTO

Ingredients:
2 large ripened tomatoes (red and yellow if available)
2 large Mozzarella balls (1/2 lb. each)
4 Tbsp of Joy’s Gourmet Basil Pesto & Garlic
3 Tbsp of Balsamic vinegar
3 Tbsp Joy’s Gourmet EVOO (Extra Virgin Olive Oil)
Salt and black pepper to taste
Directions:
Slice the tomatoes and cheese into ¼ inch slices.
On a large serving plate, layer the tomato slices and cheese. Drizzle Joy’s Gourmet Basil Pesto and garlic. Followed by the EVOO and the Balsamic vinegar.
Sprinkle a pinch or two of salt and black pepper to taste.
