Corn Beef Fritters

Left over corned beef? No worries. Use your leftover corned beef to make these delicious fritters! And for a yummy #vegetarian option, just leave out the meat. The combination of avocado, garlic, potatoes, and scallions is superb on its own. Crispy on the outside with a burst of velvety flavor on the inside. Dipped in our garlic lemon salad dressing makes for a marvelous appetizer that will impress your family and friends. ENJOY!

Ingredients:

  • 1 cup leftover corned beef, minced (omit for vegetarian option)

  • 1 lb yellow or Idaho potatoes, cubed, cooked, and mashed

  • 3 Tbsp Joy’s Gourmet Original Garlic Spread

  • 1 avocado, diced

  • 4 scallions, diced

  • ¼ cup parsley

  • 3 Tbsp Joy’s Gourmet Mediterranean Spice Mix

  • Peanut oil

  • 1 cup flour (option: gluten-free flour)

  • 3 eggs

  • 1 cup panko crumbs (option: gluten-free panko)

  • OPTION: 1 tsp red pepper flakes

Preparation:

  1. Prepare mashed potatoes as usual (cube, boil, and mash).

  2. Add garlic spread to mashed potatoes, mix thoroughly.

  3. Mix in corned beef (omit for vegetarian option).

  4. Fold in scallions, avocado, parsley, and Mediterranean Spice Mix (if you like spicy, add the red pepper flakes).

  5. Use a cookie scoop to form the mash into approximately 2” balls.

  6. Dredge balls in flour, dip in egg wash and roll in panko crumbs.

  7. Heat peanut oil to medium-high setting and fry fritters until golden brown on all sides.

  8. OPTION: You could also use an air fryer and instead of using peanut oil, simply spray all sides of the fritters with Joy’s Gourmet Garlic Infused EVOO.

  9. Place cooked fritters on paper towels to drain.

  10. Serve Joy’s Gourmet Garlic Lemon Salad Dressing on the side for dipping.
