EASY GARLIC SMASHED POTATOES

 

Easy and creamy smashed potatoes with a garlic kick? Oh yaaaas! Everyone goes crazy for these. If you are a #garliclover just add more garlic spread into the mix. These make for a great side dish to any meal. For those who are #lactosefree simply replace the cheese with lactose-free whole milk or a nut milk (like cashew). These will be a smashing hit at the dinner table. Enjoy!


INGREDIENTS:

• 2 lbs small red potatoes, unpeeled, washed, halved
• ¼ cup cream cheese (optional: cashew milk)
• 4 Tbsp fresh chives, diced
• 2 Tbsp unsalted butter, melted
• 1 tsp cracked black pepper, crushed
• 1 tsp sea salt, crushed
• 3 Tbsp Joy’s Gourmet Garlic Spread, original flavor (I also like the Sun-dried Tomato and Green Olive garlic spreads)

DIRECTIONS:                 

  1. Boil potatoes in water until tender, about 25 minutes until fork tender.

  2. Drain and let drain, then set aside.

  3. Slice potatoes into ½ inch pieces.

  4. In a bowl mix cream cheese (or nut milk), garlic spread, melted butter, chives, pepper and salt.

  5. Using a masher, mash the potatoes leaving them somewhat chunky style.

  6. Mix in cream ingredients to potatoes.

  7. Sprinkle a little more pepper and fresh chives. Serve.
