LEBANESE GARLIC LEMON POTATO SALAD
Only 5 ingredients and 5 minutes to mix together once your potatoes are cooked! The lemon-garlic flavor combination is amazing and extremely refreshing. A nice twist to an old-fashioned potato salad that everyone in our family raves over. The perfect dish to bring to a picnic or potluck! You may need to double up the recipe because everyone will be coming back for seconds. Enjoy!
INGREDIENTS:
• 2 lbs Russet or Yukon potatoes, boiled and sliced
• ¼ cup Joy’s Gourmet Garlic Lemon Salad Dressing
• 1 Tbsp Joy’s Mediterranean Spice Mix
• 4 Scallions, diced
• ¼ cup of fresh mint, diced
DIRECTIONS:
Peel and boil potatoes in salt water until tender, about 25-30 minutes.
Drain and rinse potatoes in cold water.
Slice potatoes into ½ inch pieces.
Let cool for 20-30 minutes.
Mix spice mix and salad dressing and coat potatoes.
Fold in scallions and fresh mint.
