EGGS AND PESTO BURRITO
This cheesy pesto breakfast burrito is perfect for enjoying at home or on the run. It offers a delightful combination of flavors and textures that anyone who appreciates a delicious breakfast burrito will love. INGREDIENTS:
2 large eggs
¼ cup shredded Cheddar cheese
cooking spray
2 tablespoons finely chopped onion or scallions
1 ½ teaspoons of Joy’s Gourmet Basil Pesto and Garlic
1 medium tomato diced
1 sliced ham, cut into 1/2-inch pieces
1 (10 inch) flour tortilla
salt and pepper to taste
DIRECTIONS:
Whisk eggs and basil Pesto together in a bowl until thoroughly blended; then fold in Cheddar cheese.
Coat a skillet with cooking spray and place over medium heat. Sauté onion and ham until the onion turns translucent. Add tomatoes, followed by pouring in the egg mixture. Cook and stir until the eggs set, usually around 2 to 3 minutes.
Slather a generous amount of basil Pesto on the tortilla before gently setting it on top of the eggs. Wait for a minute before flipping it 180 degrees. Let it cook for another 2 minutes, fold and transfer from the skillet, cut in half, and serve up this delightful dish.
