SHRIMP GARLIC CHIPOTLE SAUCE
Where sweet meets a soft smokey heat over a bed of shrimp. So quick, so easy, so delish!
INGREDIENTS:
• 4 Tbsp Joy’s Gourmet Chipotle Garlic Spread
• 4 large cucumbers, peeled and cut into 1/2-inch cubes
• 1 large mango, peeled, pitted, and cut into 1/2-inch cubes
• 1 lb. medium shrimp, cooked
• 3 tbsp rice wine vinegar
• 10 leaves lettuce
• 2 Tbsp cilantro, chopped
• 1 Tbsp salt
DIRECTIONS:
1. Mix vinegar, garlic spread, and cilantro in large bowl.
2. Fold in cucumbers and mango gently.
2. Pour dressing over the shrimp; toss to lightly coat.
3. Season with salt.
4. Arrange 2 large lettuce leaves on each plate.
5. Top with shrimp salad.
6. Garnish with a little cilantro and serve.
Goes great with a little extra sauce served on the side!
