Summer Squash and Eggplant Mediterranean Salad
Ingredients:
4 ounces JOY's Gourmet Original Garlic Spread
4 ounces JOY's Gourmet Garlic Lemon Salad Dressing
8 ounce Goat Cheese
12 cups Baby Mixed Greens
8 ounces Roasted Eggplant
8 ounces Summer Squash
1 large Tomato
Preparations:
Slice the Squash ans Eggplant in 1 inch wide slices length wise. Spread a thin layer of JOY's Original Garlic on each slice and bake at 350 for 45 min. Take out of the oven and let them cool. Mix the baby greens with JOY's Garlic Lemon Salad Dressing
Layer the baby greens and the roasted eggplant and squash in a serving dish. Top with feta cheese, few slices of tomato.
