Zuppa Di Pesce | Soup of the Sea

Ingredients

3 tablespoons Joy’s Gourmet EVOO (Extra Virgin Olive Oil)

  • 2 pounds sea scallops

  • 2 pounds large shrimp, peeled and deveined

  • 24 mussels, cleaned and debearded

  • 24 littleneck clams, scrubbed and rinsed

  • 1 - 24 oz Joy’s Gourmet Fra-Diavolo Sauce

  • 1/2 cup water

    1/4 cup olive oil

  • 1 small yellow onion, chopped (Optional)

  • 1 Tbsp Joy’s Gourmet Mediterranean Spice Mix

  • 1 teaspoon salt or to taste

  • 1 loaf of Artisan bread for dipping

  • 1 - 8 oz Joy’s Gourmet Garlic Spread

 Directions:

  • Heat 3 tablespoons of olive oil in a large skillet over medium heat; add the onions first if you decide to use it. Cook and stir sea scallops and shrimp in the hot oil until scallops are opaque and shrimp are pink, about 5 minutes.

  • Pour the jar of Fra Diavolo, 1/2 cup of water, ¼ cup Joy’s Gourmet EVOO (extra virgin olive oil), Mediterranean Spice Mix, and salt into a large pot and bring to a boil.

  • Add the clams and mussels to the pot and stir with cooked scallops, shrimp, into tomato mixture. Reduce heat to low and simmer for 30 minutes.

  • About 10 minutes before serving, slice the bread into ¼ inch thick slices. Spread Joy’s Gourmet garlic spread choice of flavor (Original, Sun-dried Tomato or Green Olives) on the bread and toast in the oven for 2-3 minutes.

  • Serve 2 slices in each bowl and spread the joy to your loved ones!
