ROASTED POTATOES WITH GARLIC, MUSHROOM, AND ONIONS
INGREDIENTS:
· 1 lb. baby potatoes – if large cut into 1-inch squares
· ¼ lb. chanterelles mushrooms (or any of your favorite varieties)
· 2 large onions
· 4 Tbsp of Joy’s Gourmet garlic spread original.
· 4 Tbsp of Joy’s Gourmet EVOO (optional)
· 2 Tbsp of Joy’s Gourmet Mediterranean Spice Mix
· The juice of one lemon
· salt to taste.
DIRECTIONS:
1. Preheat the oven to 400°F.
2. Scrub the potatoes if required. Cut any larger ones in half or quarters. Brush any dirt from the mushrooms, and cut them in halves or quarters, depending on their size. The pieces should be about 1 - 2 inches.
3. Peel the onions and cut each one into 8 wedges. Mix the potatoes, mushrooms, and onions.
4. Whisk together the lemon juice, oil, and seasonings. Pour over the potato mixture and gently toss to coat. Spread everything out onto a large baking sheet to give a single layer.
5. Roast in the hot oven for around 35 minutes until the potatoes are cooked through and crispy and the onions are caramelized. Transfer to a serving bowl, eat and enjoy!
